Tea notes: jungjak

This morning i opened a new-to-me tea: Korean jungjak. It's really, really lovely! Hits all my favourite flavor and feel notes, so i can see adding this to my regular rotation. Unfortunately, this particular one is no longer listed on the website i ordered from, so i can't pull the details of exactly where in Korea this one was grown.

For brewing teas i've not tried before, i start with the recommended temperature (usually 180F for green teas); however, i always prefer shorter brewing times and multiple steeps. So i start with 30 seconds per steep and adjust from there.

On first brew, the flavor was smoothly bright, slightly grassy and a bit more melon-y, with none of the bitterness that i generally associate with grassy greens. Pretty, light gold-green color.

The second brew was equally smooth but less bright. Could've done with a slightly longer (45 sec) steep, i suspect. The grass and melon flavors are still present, and the color still on the lighter side.

Did that longer steep for the third brew. The melon notes are still there, but the grassy part is gone/hidden entirely. Still smooth, though a very wee bit of bitter starting to sneak in.

Was going to do a fourth steep, for longer and at a cooler temp, just to see what would happen. But i got distracted and it brewed far, far too long. Oopsies.
