Chocolate cookies

My basic bar cookie recipe is wonderfully flexible and adaptable, but sometimes i just want different flavors entirely from the light ones i typically use (think lemon-lavender or vanilla-orange). Today, i swapped out the sorghum flour in favor of buckwheat, which goes so well with the chocolate i was craving.

They turned out exactly as i'd imagined, with subtle chocolate flavor and only lightly sweet. Next time i'll add spices but first attempts are better kept simple. As an added bonus, the house still smells amazing several hours later.

But mostly it's just really nice to be back at a place, mentally and physically, where i can spontaneously bake and have it be fun. No brain fog to make me forget ingredients. No fatigue to mess up the timing for taking things out of the oven. It's been a long, slow process--in part from also having to re-learn to bake without wheat or the additives typically used in "gluten free" baking. Just "oh hey, what about..." and then making it happen. Sweet.
